**Duties and responsibilities related to the Assistant Mangaer - Hygiene role:**



+ Assist in the implementation, maintenance, and continuous improvement of the hotel’s **Food Safety Management System (FSMS)** based on **HACCP** principles.

+ Conduct rigorous daily and weekly internal **audits** of all kitchens, food outlets, banqueting areas, and receiving bays to ensure compliance with hygiene standards.

+ Coordinate the regular microbiological sampling and testing of food, water (potable and swimming pools), and surfaces by external laboratories.

+ Oversee the **Pest Control** program, managing the external contractor, monitoring trends, and ensuring that any reported issues are resolved immediately.

+ Develop and deliver comprehensive **food safety training** programs (Basic to Advanced) for all food handlers, stewards, and service staff.
