At Optus Stadium, we operate multiple high-volume kitchens across different areas, including:


  • Premium Retail – High-end burgers and retail food
  • Corporate Suites – High-end cocktail and private buffet stations
  • Victory Lounge, Goodwood Restaurant, and Coaches Club – High-end plated catering
  • About the Role


    As a Casual Chef in Charge, you will take ownership of a kitchen on major event days, ensuring service runs smoothly and food is prepared to the highest standard. With support from full-time roaming chefs and leadership from the Executive Chef and Sous Chef team, you will:


  • Lead and manage your team of chefs within an assigned kitchen
  • Follow event orders and manage timings to ensure food is served on schedule
  • Prepare for peak demand periods, such as halftime breaks
  • Maintain HACCP standards and uphold food safety compliance
  • Anytime you are appointed to run a kitchen, you will be paid at the Sous Chef rate. If you are available for mid-week prep shifts, you will be rostered as a Chef de Partie.

    What We’re Looking For


  • Trade qualification in commercial cookery
  • Six or more years of experience in a five-star hotel, high-end restaurant, or large venue
  • At least two years of experience as a Sous Chef
  • Strong understanding of HACCP and food safety standards
  • Ability to lead a team and manage service under pressure
  • Knowledge of traditional and modern cooking techniques as well as current Australian food trends

  • We are looking for Chefs in Charge available throughout the AFL season, with training provided to prepare for the busy June 2025 events period
  • The majority of major events are on Fridays, Saturdays, or Sundays, with some mid-week events
  • Shadow shifts will be provided based on experience to ensure you are comfortable before leading a kitchen
