Commis 2 Duties & Responsibilities

A Commis 2 (junior kitchen role) assists in food preparation and supports senior chefs in a Pizzeria.

  • Prepare mise-en-place: Chop, portion, and organize ingredients per recipes and station needs.
  • Assist Chef de Partie/Commis 1 in cooking, plating, and presenting dishes to quality standards.
  • Maintain workstation cleanliness, sanitize equipment, and follow HACCP hygiene protocols.
  • Stock/re-stock kitchen items, check inventory, and rotate stock (FIFO system).
  • Operate basic equipment (grills, ovens, fryers) and monitor food temperatures.
  • Support buffet setups, clear used items, and minimize waste/costs.
  • Acknowledge shift handovers, attend briefings, and report issues to supervisors.
