Zélia Halkidiki, a member of the Destination by Hyatt collection, is an adults-only barefoot luxury resort where gastronomy, wellbeing, and nature come together. Rooted in Greek generosity and Mediterranean craftsmanship, Zélia’s culinary experience unfolds across four distinctive concepts: Mesogaea, Zest, Shizen, and the immersive Syntrofi olive grove dining ritual.

We are seeking an Executive Chef to lead and elevate our culinary operations and bring Zélia’s food philosophy to life every day.

Role Overview

The Executive Chef is the operational leader of all kitchens and the guardian of Zélia’s culinary identity. Working closely with the Culinary Director, you will ensure flawless execution across all outlets, inspire the culinary team, and deliver exceptional dining experiences aligned with Zélia’s barefoot luxury ethos.

Key Responsibilities

  • Lead and oversee all culinary operations across multiple outlets and service styles (buffet, à la carte, experiential dining).
  • Implement and execute the culinary vision set by the Culinary Director.
  • Supervise, mentor, and develop Chefs de Cuisine and kitchen teams.
  • Ensure the highest standards of food quality, consistency, presentation, and hygiene.
  • Manage daily operations, production planning, and service flow.
  • Control food cost, inventory, procurement, and recipe costing.
  • Collaborate closely with Service, Beverage, Finance, Procurement, and Marketing teams.
  • Ensure full compliance with HACCP, hygiene, safety, and sustainability standards.
  • Be visible and engaged during service, special events, and guest experiences.

  • Degree or diploma in Culinary Arts.
  • Minimum 10 years of experience in luxury hotels or fine dining environments.
  • At least 3 years in an Executive Chef or Executive Sous Chef role.
  • Strong background in Mediterranean cuisine with international exposure.
  • Proven experience in multi-outlet operations and buffet & à la carte service.
  • Solid knowledge of food cost control, procurement, and HACCP.
  • Computer literate (Materials Control, Simphony, MS Office).
  • Fluent in English and Greek.
