Responsibilities:

  • Prepare and execute traditional South Indian dishes using authentic recipes and regional techniques.
  • Manage kitchen operations during peak hours, ensuring timely and consistent food delivery.
  • Maintain high standards of food safety, hygiene, and cleanliness in compliance with commercial kitchen regulations.
  • Supervise and mentor kitchen staff, promoting efficiency, teamwork, and adherence to recipes.
  • Source and manage ingredients with attention to freshness, quality, and seasonal availability.



Requirements

Requirements:

  • Minimum 2–5 years of hands-on experience in a South Indian or Kerala-style kitchen.
  • Expertise in traditional cooking methods including steaming, tempering, roasting, and slow-cooking.
  • In-depth knowledge of regional spice blends, coconut-based gravies, tamarind, curry leaves, and other core ingredients.
  • Proven experience in preparing both vegetarian and non-vegetarian South Indian dishes.
  • Basic proficiency in English or Hindi (Malayalam or Tamil is a plus).
