From large-scale conferences to gala dinners and weddings, our culinary team at Pullman & Mercure Melbourne Albert Park delivers high-volume, high-standard banqueting with precision, consistency and pride.

We are currently seeking Commis Chefs and Demi Chefs to join our Kitchen team, with multiple positions available.



About the roles:

These roles suit chefs who enjoy the pace of a busy kitchen, work well as part of a team, and take pride in delivering consistent quality at scale. Banqueting experience will be highly regarded, particularly for Demi Chef applicants.

Depending on your level and experience, you may be responsible for:

  • Daily food preparation and production in line with hotel recipes and standards
  • Assist with the food preparation and production for breakfast, lunch, dinner, room service, banqueting and buffet service
  • Supporting service across our different F&B outlets, conferences and events 
  • Maintaining food quality, presentation and portion control
  • Adhering to HACCP, food safety and hygiene standards at all times
  • Assisting with stock control and kitchen organisation
  • Working collaboratively with the wider Kitchen and Food & Beverage teams
  • Demi Chefs will also be expected to demonstrate stronger technical skills, efficiency during service, and the ability to support and guide junior team members when required. 

Qualifications

What we’re looking for:

  • Previous experience in a commercial kitchen (hotel or high-volume environment preferred).
  • A genuine passion for food and hospitality.
  • Ability to work under pressure and meet tight service deadlines.
  • Strong teamwork and communication skills.
  • Relevant trade qualification (Certificate III in Commercial Cookery or equivalent.
  • Food Safety Certificate is essential.
  • Flexibility to work on a rotating roster, including morning, afternoon, evening and weekend shifts.
  • Australian working rights and current Australian location

For Demi Chefs, we are expecting stronger technical skills, efficiency during service, and the ability to support and guide junior team members when required. Banqueting experience will be highly regarded.
