Kitchen Expo/Kitchen Builder

Kitchen EXPO and/or Kitchen Builders wanted! (and NO, we are not looking for someone to build us a kitchen!) Lucy Buffett's LuLu's is a Fast Paced, Casual Waterfront Family Restaurant and Bar where Food, Fun, and Music are always a part of our culture. Wondering what an Expo or Builder does in the restaurant industry? We wrote a quick explanation below: Expo, this person is on the other side of the kitchen window, opposite of the line cooks. They receive all food ticket, communicate the needs of the ticket to the line cooks, get estimated cook times, pull the food listed on the ticket and put them on a tray, once the ticket is complete the tray then gets moved to the Builder. The Builder then “Builds” the tray by adding requested sauces from guests, sauces that come for specific food items on the ticket, setups for sandwiches, coleslaw, fruit etc. Once the tray is built then it is ready for the food runners to bring to the table. Curious what some of the ...
