Culinary Excellence

  • Execute traditional and contemporary sushi & sashimi at the highest international level
  • Mastery of knife techniques, fish aging, rice preparation, and temperature control
  • Design and continuously refine a premium sushi menu aligned with Mylos’ identity
  • Incorporate Mediterranean and Greek influences where appropriate, without compromising authenticity
  • Ensure immaculate plating, balance, and consistency
  • Guest Experience

  • Interact confidently with high-profile, VIP, and international guests
  • Present omakase experiences and explain ingredients, techniques, and philosophy
